BEE POLLEN IN THE ONE HEALTH SYSTEM: SAFETY AND POTENTIAL APPLICATIONS

The monograph "Bee Pollen in the One Health System: Safety and Potential Applications" is devoted to a comprehensive study of bee pollen as an important beekeeping product combining high biological value, functional properties, and significant potential for use in modern food systems. The role of beekeeping as an essential component of contemporary agri-food systems and one of the key factors in maintaining ecological balance is examined. Based on an analysis of current scientific literature, approaches to assessing the place of beekeeping in the implementation of the One Health concept and the achievement of the Sustainable Development Goals are summarized. Particular attention is paid to the role of bee products in the development of safe and sustainable food systems, as well as to the prospects for organic beekeeping development in the European Union and Ukraine.
The monograph presents up-to-date information on the origin, formation, chemical composition, and biological value of bee pollen. Its main components are characterized in detail. A separate chapter is devoted to the analysis of bee pollen safety. Potential risks associated with contamination by heavy metals, pesticide residues, veterinary drugs, mycotoxins, and radionuclides are considered. Based on modern scientific approaches, the criteria for assessing the quality and safety of bee pollen are summarized, and the factors influencing the formation of its consumer properties are identified.
Considerable attention is paid to the radiological safety of bee products. The potential of bee pollen as a bioindicator of environmental quality and as a tool for monitoring contamination of agricultural landscapes and natural ecosystems is analyzed. The monograph highlights the significance of bee pollen within the framework of the One Health approach, emphasizing the interconnections between environmental sustainability, food safety, animal health, and human well-being.
